壮石の心 (Our Philosophy)

日本の良質な食文化の魅力を伝えたい

西谷正重はすしでお客様を喜ばせたいという思いのもと、大正十年(1921年)、「寿司岩」を神戸元町に創業いたしました。その後、昭和二十四年(1949年)に築地へ移転いたしました。凛としたカウンターと、家族の活気が融合した店でした。

そして今、創業者の心意気を受け継ぎし家族が、すしという日本の良質な食を通じて、お客様を笑顔にし、活力を与え、そして本物の味を後世に伝承したいという思いを胸に、平成二十二年(2010年)に「銀座 壮石」を開店いたしました。

Our Philosophy: We want to convey the high-quality food culture of Japan to the world.

Our grandfather, Mr. Masashige Nishitani, founded "Sushi-iwa" in Motomachi, Kobe in 1921 with the desire to please customers with sushi. After World War II, he moved his restaurant to Tsukiji in Tokyo in 1949. It was a sushi restaurant with a dignified and clean counter seat, but also a family gentle atmosphere.

And now, his family, who inherited the founder's spirit, wanted to pass on his thoughts and tastes to future generations, and in 2010, "Ginza Soseki" was opened in Ginza, Tokyo.

江戸前鮓と会席料理

銀座は築地場外市場、豊洲市場から至近。最高のすしねたと、みずみずしい青果が手に入るこの地で、「寿司岩」から生え抜きの若手すし職人が初代の技と味を受け継ぐ本格江戸前ずしを披露します。

さらに、半世紀を料理の道に奉げた創業者の四女が料理長として、女性の感性で食材本来の味を生かした会席料理を提供いたします。

Edomae-Sushi and Kaiseki Cuisine

Ginza is close to the Tsukiji Outer Market and Toyosu Market, where we can get the best seafood and fresh fruits and vegetables. Our sushi chef trained at "Tsukiji Sushi-iwa", which was founded in 1921 by our grandfather. He inherited the technique and taste of our grandfather's sushi and offers authentic Edomae-Sushi to everyone.

In addition, our grandfather's fourth daughter is the head chef of our restaurant and has devoted herself to cooking for half a century. Taking advantage of her feminine sensibilities, she offers kaiseki cuisine that makes the most of the original flavors of the ingredients.


我々はこれらの思いを実現すべく、創業の原点に立ち返りました。すしと料理を通じて、真心をこめた四季折々の逸品を創り出し、凛とした雰囲気と下町の温かさを融合したおもてなしのもとで召し上がって頂く所存です。
